I was curious if there is a way to remove the thumbnails completely in the lite version? If not, is it possible in the pro version? I don't want the thumbnails to show up at all.

No.

If not, is it possible in the pro version?

Yes. Use the following Juicebox-Pro configuration options:

showSmallThumbs="FALSE"
showLargeThumbs="FALSE"
showThumbsButton="FALSE"
